Karl helped with the docorating. He really had fun decorating this kitty, and was very proud of it afterwards. :D


Easy Gingerbread Recipe
(From Lore – great for gingerbread houses and cookies)

Ingredients:
2 cups sugar
1 cup water
1 cup dark corn syrup
1 tablespoon ground ginger
2 teaspoons ground cloves
2 teaspoons ground cinnamon

Put these ingredients into a large saucepan and bring to a slow boil. Turn of f burner.

Add:

2 cups margarine or butter.
Let cool.

After mixture has cooled, add:

8 cups all plain flour
3 teaspoons baking soda (mixed in with the flour)
Mix into a smooth dough.
You can use it immediately as is, or sometimes I refrigerate it for later use, depending on how you use it.
Roll it out onto a baking tray and bake it in a preheated oven at about 180 C for about 15 minutes. Then use your template shapes to cut out the shapes for your gingerbread.

Alternatively, cut out your shapes before you bake them. I usually do this. I use cookie cutters to cut out all sorts of fun shapes, which I later decorate with colourful sprinkles and candies. Note: you probably won’t need to use cooking spray because these are so high in fat they don’t stick, but if you’re not sure, use baking paper for baking.

Icing – for cookie topping or to “glue” walls of gingerbread house together. Note: icing consistency must be very stiff to use as “mortar” to hold walls and roof in place. For glazing Icing must be more like a paint consistency so it can be painted onto cookies. Takes a bit of trial and error.

Icing
2 egg whites
4 cups icing sugar
½ teaspoon lemon juice
Beat egg whites until frothy
Add icing gradually until stiff peaks form - stir in lemon juice.
Note: you can add food colour. (green for Christmas tree shapes, yellow for stars, pink for hearts, etc. )

We gave this one to one of the little kids in the family. Most of the cats went to the kids. I mad 9 in total. :D
